The project, named WINNY, aims to explore the compositional and application aspects of yeast derivatives in depth, with the goal of providing winemaking tools that meet current market demands and requirements:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>allergen-free;<\/li>\n\n\n\n<li>free from synthetic products;<\/li>\n\n\n\n<li>free from animal-derived products;<\/li>\n\n\n\n<li>reduced subtractive processing.<\/li>\n<\/ul>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<p class=\"wp-block-paragraph\">In this article, we will examine the role of certain derivatives in preventing oxidation phenomena and facilitating the stabilization of coloring matter, with a focus on ros\u00e9 wines.<\/p>\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>Yeast Derivatives<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">The term &#8220;yeast derivative&#8221; encompasses a range of products (see Fig. 1) that differ in production technology, composition, and oenological properties.<\/p>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<figure class=\"wp-block-image size-full\"><img fetchpriority=\"high\" decoding=\"async\" width=\"384\" height=\"303\" src=\"http:\/\/localhost\/wp-content\/uploads\/2026\/05\/Immagine1.png\" alt=\"\" class=\"wp-image-2568\" srcset=\"https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine1.png 384w, https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine1-300x237.png 300w\" sizes=\"(max-width: 384px) 100vw, 384px\" \/><\/figure>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<p class=\"wp-block-paragraph\">As part of this study, 9 inactive yeasts, 2 cell walls, 6 autolysates, 5 extracts, and 6 mannoproteins were characterized and tested.<\/p>\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>Characterization of Derivatives<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">All derivatives were characterized, with specific quantification of:<\/p>\n\n<ul class=\"wp-block-list\">\n<li>Nitrogen content (in various forms) and amino acid profile;<\/li>\n\n\n\n<li>Reduced glutathione (GSH) concentration;<\/li>\n\n\n\n<li>Total and cell-wall cysteine (Cys) concentration;<\/li>\n\n\n\n<li>Antioxidant capacity, measured via three different assays (FRAP, DPPH, ABTS);<\/li>\n\n\n\n<li>Polysaccharides.<\/li>\n<\/ul>\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>Yeast Derivatives and Antioxidant Protection<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">As shown in previous studies, among the tools available to winemakers to ensure the proper evolution of white and ros\u00e9 wines, <strong><a href=\"https:\/\/dalcin.com\/prodotto\/harmony-vitality\/\">Harmony\u00ae Vitality <\/a><\/strong>is undoubtedly one of the top performers. It provides protection equal to or greater than $\\text{SO}_2$ and reduced glutathione by counteracting dissolved $\\text{O}_2$, thereby protecting color and aromas during aging and storage (see Graph 1).<\/p>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"600\" height=\"295\" src=\"http:\/\/localhost\/wp-content\/uploads\/2026\/05\/Immagine2-600x295-1.png\" alt=\"\" class=\"wp-image-2569\" srcset=\"https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine2-600x295-1.png 600w, https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine2-600x295-1-300x148.png 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<p class=\"wp-block-paragraph\">As shown in Graphs 2 and 3, the GSH and Cys concentrations in <a href=\"https:\/\/dalcin.com\/prodotto\/harmony-vitality\/\">Harmony\u00ae Vitality <\/a>are significantly higher than the average found in other derivatives. This directly translates into higher antioxidant capacity, as measured by three different methods (see Graph 4).<\/p>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<figure class=\"wp-block-image size-full\"><img decoding=\"async\" width=\"600\" height=\"169\" src=\"http:\/\/localhost\/wp-content\/uploads\/2026\/05\/Screenshot-2025-06-18-100810-600x169-1.png\" alt=\"\" class=\"wp-image-2570\" srcset=\"https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Screenshot-2025-06-18-100810-600x169-1.png 600w, https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Screenshot-2025-06-18-100810-600x169-1-300x85.png 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n<figure class=\"wp-block-image size-full is-resized\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"295\" src=\"http:\/\/localhost\/wp-content\/uploads\/2026\/05\/Immagine3-600x295-1.png\" alt=\"\" class=\"wp-image-2571\" style=\"width:600px;height:auto\" srcset=\"https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine3-600x295-1.png 600w, https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine3-600x295-1-300x148.png 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>Yeast Derivatives and Color Protection<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">Yeast derivatives play a positive role in color protection through two distinct mechanisms: they protect anthocyanins (red and ros\u00e9 wines) and catechins (white and ros\u00e9 wines) from oxidative degradation, and they act as protective colloids to prevent the precipitation of coloring matter (red and ros\u00e9 wines).<\/p>\n\n<p class=\"wp-block-paragraph\">The first mechanism is characteristic of <a href=\"https:\/\/dalcin.com\/prodotto\/harmony-vitality\/\">Harmony\u00ae Vitality<\/a> (see Graphs 5 and 6); the second mechanism is leveraged by the mannoproteins in <a href=\"https:\/\/dalcin.com\/wp-content\/uploads\/2023\/10\/AFF_harmonyRefine.pdf\">Harmony\u00ae Refine<\/a> (see Graphs 7 and 8).<\/p>\n\n<p class=\"wp-block-paragraph\"><\/p>\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"600\" height=\"437\" src=\"http:\/\/localhost\/wp-content\/uploads\/2026\/05\/Immagine-2025-06-18-101258-600x437-1.png\" alt=\"\" class=\"wp-image-2572\" srcset=\"https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine-2025-06-18-101258-600x437-1.png 600w, https:\/\/www.dalcin.com\/wp-content\/uploads\/2026\/05\/Immagine-2025-06-18-101258-600x437-1-300x219.png 300w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/figure>\n\n<div style=\"height:50px\" aria-hidden=\"true\" class=\"wp-block-spacer\"><\/div>\n\n<p class=\"has-medium-font-size wp-block-paragraph\"><strong>Conclusions<\/strong><\/p>\n\n<p class=\"wp-block-paragraph\">Yeast derivatives serve as versatile tools across all winemaking stages: they act as nutrients for yeasts and bacteria, fining agents for musts and wines, alternatives to $\\text{SO}_2$ for oxidation management, protective colloids against color precipitation, and aids for tartrate and protein stability. The WINNY project continues to investigate the specific properties of numerous derivatives to identify the most suitable solutions for individual applications.
