The 2025 edition of Enoforum—one of the most important technical-scientific conventions in the winemaking sector, held from May 21 to 23 at the Veronafiere Congress Center in Verona—has successfully drawn to a close.
Throughout the event, innovative oenotechnical solutions were presented, designed to address the wine supply chain’s practical needs regarding quality, sustainability, and technological advancement. The company’s presence generated significant interest among industry professionals, providing numerous opportunities for dialogue and in-depth discussion.
A key highlight was the technical panel on Thursday, May 22, dedicated to “Yeast Derivatives: Characteristics, Oenological Applications, and Future Prospects.” The presentation—led by Dr. Maria Manara, R&D Manager at Dal Cin, and Prof. Daniela Fracassetti from the University of Milan—showcased the latest research on the potential of yeast derivatives in winemaking, paving the way for exciting innovations in the sector.
The session offered a valuable opportunity to present the most significant findings from Dal Cin’s R&D department. Their work provided a deep dive into the composition of yeast derivatives and shed light on how they support fermentation management. Furthermore, discussions with attendees sparked compelling insights and fresh ideas on how to maximize the value of these tools, placing them at the heart of modern, sustainable precision winemaking.
