Liquid pectolytic enzyme with high pectinlyase activity. It is particularly indicated for the depectinization of musts intended for flotation, in fact the optimal PG/PL ratio allows to quickly degrade the pectins of unripe grapes or difficult varieties, e.g. Muscat.
